Green Onions + Meal Plan

First harvest from our tire garden is: Green Onions! They smell so good… of course, I have no idea what to do with them. Other than lots of salads. And giving some to family members (to… put on salads?)

So I had to dig for some recipes that I can throw them into, and I think I’ve got a pretty solid meal-plan lined up for the week. (in no particular order)

I figure I can work the scallions in to every dish except the nuggets (and the freezer pops, of course). Can’t wait! I’m hungry now!

    Stumbled upon your blog through the Tim Curry fan site and I must say I’ve never heard of a tire garden, it looks quite interesting! I saw your post and have been wracking my brain to try and ocme up with something for you to do with those onions. I finally came across a dressing recipe if you’re interested. It’s called Green Goddess Dressing, it can be make in minutes and is fab on virtually anything you can think of. You can tweek this and use one cup of greek styple yogurt and one cup of light mayo for a lighter version, also you can opt out on the anchovies if you wish. I know my kids are a little picky.

    2 cups mayonnaise
    1/4 teaspoon anchovy paste
    1 green onion, chopped
    2 teaspoons chopped fresh parsley
    2 teaspoons chopped fresh chives
    1 teaspoon chopped fresh tarragon
    Salt and Pepper to taste.

    Directions
    Mix together mayonnaise, anchovy, green onion, parsley, chives, vinegar.
    Refrigerate until ready to serve and pour over favorite salad or greens.
